Time to recap our menu for the week!

Latin Baked Chicken (Cooking Light): Much spicier than expected! But, it was really good, and I'll probably make it again. I may try to cut back on the amount of chipotles, or maybe add some pineapple juice to help it out. I posted the recipe here. Yummy, if you like the spicy!

Creole Shrimp (Kraft): Our favorite dish of the week! It's probably going to be made a lot more frequently at our house. It's just so easy and with just a few ingredients, many that I'll almost always have on hand. This is the week's winner! Here's the recipe.

Carrie's Marinated Steak Kebabs (Country Living): I got the recipe here. We made this last night and I took pictures of the whole process. They turned out good, but not anything notably special. I won't go to that much trouble to make this marinade again because I feel like a bottled version would accomplish practically the same thing. The steak did turn out yummy though, don't get me wrong, and anytime you grill veggies on kabobs, they're good. Just doubtful that I make this marinade ever again.


Now it's time for the 4th of July!! We are not sure yet what we'll be making, but I'm feeling in the mood for grilling, yummy beans, slaw and a patriotic dessert. Maybe something like this?
