Baked Ziti with Summer Vegetables

We L-O-V-E baked pasta. The crispy edges and cheesy goodness always takes me to a happy place. In the summer months we don't do as much pasta or baking; it's just too hot!! But, when I saw this Cooking Light recipe in a MyRecipes.com email, I knew I had to make it soon. After making several modifications, this was a fantastic pasta and Keith loved it! I added some shredded rotisserie chicken to it to satisfy him, but that's totally optional. The leftovers were also superb.

Baked Ziti with Summer Vegetables

Ingredients:
6 ounces uncooked ziti or penne pasta (really whatever pasta you like)
1 cup shredded cooked chicken (optional)
1 Tbsp olive oil
2 cups chopped yellow squash
1 cup chopped zucchini
1 cup chopped mushrooms
1/2 cup chopped onion
2 cups seeded and chopped tomatoes
2 garlic cloves, minced
1 cup (4 ounces) shredded Italian blend cheese, divided
2 Tbsp chopped fresh basil
2 tsp chopped fresh oregano (I used 1 tsp dried)
3/4 tsp salt, divided
1/8 tsp crushed red pepper
1/2 cup part-skim ricotta cheese
1 large egg, lightly beaten
Cooking Spray

Cook pasta according to package directions, omitting salt and fat; drain.

Preheat oven to 400°.

Heat a large skillet over medium-high heat. Add oil to pan. Add squash, zucchini, and onion; sauté 5 minutes. Add tomato, mushrooms and garlic; sauté 3 minutes. Remove from heat; I moved this mixture to a large bowl so I had room to stir. Add in pasta, chicken (optional), 1/2 cup cheese, herbs, 1/2 teaspoon salt, and pepper.

Combine ricotta, remaining salt, and egg in another dish. Stir into pasta mixture. Spoon into an 8-inch square glass or ceramic baking dish coated with cooking spray; sprinkle with remaining cheese. Bake at 400° for 15 minutes or until bubbly and browned.

My Favorite Roasted New Potatoes

Roasted new potatoes have always been a favorite side dish of mine. I'm not a big baked potato fan. It just feels like too 'much' to me and always makes me feel so full. So, little red potatoes are my favorite way to add some starch to a dinner. I've roasted them several ways, and usually I keep it pretty simple. But, I found this recipe in a Kraft magazine a while back and after slightly adapting, I am addicted to them. I have to force myself not to pick them off the hot pan as soon as they are out of the oven. I've definitely burnt my mouth a few times!

PS - There's BACON in here, and I am a firm believer that bacon makes everything better...

Roasted New Potatoes

Ingredients:

Around 1 lb new red potatoes, halved lengthwise
6 slices of applewood-smoked bacon (I like Wright's brand), chopped
3 Tbsp Kraft Zesty Italian dressing
1 & 1/2 Tbsp freshly grated Parmesan Cheese
2 tsp chopped fresh parsley

Optional addition:
1/3 cup reduced fat mayonnaise with olive oil
1 Tbsp lemon juice
1 garlic clove, minced

Heat oven to 400 degrees.

Combine potatoes, bacon and dressing; spread onto rimmed baking sheet. Bake 45 min. or until potatoes are tender and crisp around the edges, stirring after 25 min. The smaller you cut your potatoes, the faster they will cook.

When it comes out of the oven, top with the Parmesan cheese and parsley.

Optional: If you want to make this more of a light potato salad, mix the above ingredients (mayo, lemon juice and garlic) together and toss with the potatoes. This is pretty delicious, too!

Grilled Portobello-Goat Cheese Pitas

Getting Keith to eat a meatless meal is like trying to sell honey to a honey bee. It ain't an easy sell.
The man is conditioned to eat meat. He often asks me why a perfectly good vegetarian recipe couldn't have a little chicken added to it. When I look for recipes, I don't evaluate them based on whether or not they have meat, I just drool over the ingredients list and don't even think about it. Well, I've learned to be very sneaky and persuasive about any vegetarian meals in this house. I choose wisely and usually just make the dish without a warning. Nine times out of ten, he tastes it and loves it....and heats up a chicken breast later.

This recipe, however, was a favorite. Maybe it's because he was starving after moving the lawn on a hot day, or he was too lazy to hunt for chicken, beef or fish in the fridge afterwards, but this was enough for Dr. Jones on a recent evening! I loved it, too. Thanks again, Cooking Light!

Grilled Portobello-Goat Cheese Pitas

Ingredients:
1 1/2 tsp minced garlic or 2 cloves fresh garlic, minced
1 tsp olive oil
4 (6-inch) pita rounds
1/2 tsp salt, divided
1/4 tsp black pepper, divided
1 (6-ounce) package of Portobello mushrooms
2 medium tomatoes, cut into 1/4 inch thick slices
1/3 cup (3-ounces) goat cheese
1/2 cup chopped fresh basil 

Preheat a grill pan over medium heat.

Combine garlic and oil; brush evenly over pitas. Sprinkle 1/4 teaspoon salt and 1/8 teaspoon pepper evenly over pitas. Place pitas in pan, and cook 2 minutes on each side or until toasted.

Sprinkle 1/4 teaspoon salt and 1/8 teaspoon pepper evenly over mushrooms and tomatoes. Place mushrooms in pan; cook 6 minutes or until tender, turning once. Remove mushrooms from pan. Add tomatoes to pan; cook 1 minute.

Spread goat cheese evenly over pitas. Arrange the mushrooms and tomatoes evenly over pitas. Sprinkle with chopped basil.

Wine Friday: Cabernet Sauvignon

Happy Friday! I hope you've had a wonderful week! I'm off work today, which makes me a happy girl. At my office, we have a new summer hours program so that every other week you can be off on Friday if you put in 40 hours Monday-Thursday and if you are able to break away from your to-do list. I don't have any problem getting 40 hours in 4 days, in fact it's usually more, so this is a nice way to be rewarded for that!

I'm also excited today because my blogger friend, Sheri, has featured me today on her blog!! She has a new Foodie Friday series of posts and she interviewed me to be her first one - I can't believe it :) How flattering! Please click here to check out her post, and explore her great blog, too!
 

Before I get into Wine Friday...and because I have been so behind on posting, I thought I'd share a few of my instagram images from the last week so you can see what I've been up to!

Last weekend, I added a new painting to the kitchen. This is by a local artist and I think it's perfectly funky and colorful for us! Her name is Susan Hood and her art is sold in various shops around the Memphis area.

I exercised my creativity on Monday at an all-day meeting/brainstorming session. The tables were filled with toys, candy and random art supplies. I made excellent use of the pipe cleaners!

We've been having caprese-something almost every night this week. Tomatoes are at their peak right now and my herb garden is full of basil. Keith is also addicted to this flavor combo, so we just don't get sick of it!

This is a product that I recently found at my grocery store and I LOVE it! I have bought 3 bottles since I discovered it. In case my store decides to pull it off the shelves, I don't want to run out!

wine fridays

This week, I'm featuring a wine that I tried about a month ago. As you can see from my photo below, it had been a long, long day. I like to write dates and notes on my corks - it makes my bowls full of them a little bit more fun. Anyway, this is a yummy Cabernet and I've since bought a few more bottles to keep in my stash.

Year: 2009
Origin: Washington State
Average Price: $10-11
About the wine: This wine received 90 points from Wine Spectator, and I would agree with that ranking. They also classified it as one of the 100 Outstanding Values for 2011. For a reasonable price, this is an excellent cab. Costco sells for $8, so stock up!

And, please say a pray for the families of those killed in Colorado at the movie theater shooting. I can't even comprehend why these terrible things happen, or what it must have been like to be there.

Tomato Stack Salad with Corn and Avocado

My current obsessions include: vine-ripe tomatoes, basil picked from my herb garden and fresh summer corn. I could eat these ingredients in some way every single day of the season. I can't get enough of it! So, when I saw this recipe in Cooking Light's latest magazine, I immediately tore it out and made it the next day for dinner.

It was just as delicious as it looks! Keith didn't even comment on how much he liked it because he devoured it without stopping to breathe. I served it with some broiled salmon, brushed with barbeque sauce.

Tomato Stack Salad with Corn and Avocado

Ingredients:
  • 2 bacon slices, halved 
  • 1/4 cup low-fat buttermilk (or combine regular milk and 1 tsp lemon juice, let sit for 5 minutes)
  • 1 tablespoon finely chopped fresh chives
  • 1 tablespoon finely chopped fresh basil
  • 2 tablespoons canola mayonnaise 
  • 2 teaspoons cider vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon freshly ground black pepper, divided
  • 2 ears shucked corn
  • Cooking spray 
  • 4 large tomatoes (I chose a variety of color)
  • 1/8 teaspoon kosher salt
  • 1/2 ripe peeled avocado, thinly sliced
  • 4 teaspoons extra-virgin olive oil

Preheat the grill to high heat.

Heat a large nonstick skillet over medium heat. Add bacon to pan; cook 8 minutes or until crisp, tossing occasionally to curl. Drain bacon on paper towels,

Combine buttermilk and next 5 ingredients (through garlic), stirring with a whisk. Stir in 1/4 teaspoon pepper.

Coat corn with cooking spray. Place corn on grill rack; grill 8 minutes or until well marked, turning occasionally. Remove from grill; cool slightly. Cut corn kernels from cobs.

Sprinkle tomato slices evenly with salt. Alternate layers of tomato and avocado on each of 4 plates. Scatter corn evenly onto plates. Drizzle each tomato stack with about 1 1/2 tablespoons dressing and 1 teaspoon oil. Sprinkle remaining 1/4 teaspoon black pepper over salads; top each salad with 1 bacon piece.

Happy Friday!! Wheeew, this is long overdue. My week has been NUHHH-TEEEE: working late, Keith traveling every day, random dinners in front of our DVR'd shows, dishes piled in the sink, personal to-do lists totally forgotten, blog posts never made,  one completely sleepless night and some rainy days. Needless to say, this is one weekend I am READY for....

And this bottle of wine is one I was ready for tonight..

Welcome to Wine Friday! It's been fuh-evv-uhh since I've posted anything of the sort in a while! Have you been able to continue making wine selections without me? :) What have you found? Do tell.

Here's a little charmer I enjoyed tonight. Although just about any variety would have sufficed, I liked the sass of this one. It fit my mood. I zoned out for a minute and read the back of the label on the bottle and then agreed that this was perfect for the night. SASSY, SULTRY, BLENDED.

Hey Mambo, Bistro Style Wine, Sultry Red
Year: 2010
Origin: California
Average Price: $8-10
About the wine: Feisty and creative, 'The Other Guys' wine company has dished out a few wines that I've really loved - and, this is one of them. This is a blend of a number of big red varietals from the places that they grow best: Syrah, Petite Syrah, Grenache, Tempranillo, Cabernet Sauvignon, Merlot. Their website says: this blend would pair wonderfully with a rack of slowly braised ribs dripping in molasses based BBQ sauce. Sausage lasagna would also be a good pairing. You could also serve this wine with a dessert course of dark chocolate (the 60-70% Cacao stuff). This is a very versatile wine.
I would agree, 'TOG'. This is a new favorite!! I also love your creative cork :)

Peach Mojitos

I just realized that I've never posted a Beverage recipe on the blog! Where have I been? I guess posting too much about wine instead :) Time to add a new category to the recipe index!

Here's a DEEEElicious recipe for Peach Mojitos courtesy of Southern Living. I love mojitos, but don't want to spend all my time at a party mixing up individual ones. This is the perfect pitcher-friendly blend, great for entertaining. I made a batch this weekend and took it the nail salon with my girlfriends. Such fun!!

Peach Mojitos

Ingredients:
About 1 lb. peaches, unpeeled and chopped (I used the clingstone, non-fuzzy kind)
1/2 cup superfine sugar (I only had regular granulated and it was fine)
1/4 cup fresh lemon juice (about 1 lemon)
1/2 cup firmly packed fresh mint leaves
4 cups club soda, chilled
2 cups white rum
Garnishes: fresh mint sprigs, peach wedges

Process first 3 ingredients in a blender or food processor until smooth. (Yield should be about 2 cups.) You can make this part up to 24 hours ahead of time and store covered in the fridge.

Muddle mint leaves against bottom and sides of a glass pitcher with the back of a wooden spoon to release flavors. (Leaves will be bruised and torn.) Add club soda, rum, and peach mixture; stir to combine. Serve immediately over ice. Garnish with more mint and peach slices.


This is seriously SO delicious! I would not recommend assembling the rest of the punch until you're ready to server as the club soda will go flat. You should get about 8 drinks out of this. ENJOY!!

Yankee Doodle Dandy of a Night

We had a Yankee Doodle of a 4th of July by celebrating with our friends in Memphis! We had 5 couples over to our house for some burgers, yummy sides, homemade ice cream and fireworks. It was a wonderful night! Here are the pics:

I love inexpensive flags - I lined our flower beds outside to greet guests...and show our patriotic pride off to the neighborhood!

I LOVE fireworks! I bought a few goodies at the local stand. I can't help myself every year.

In the dining room, I layered a PB burlap runner with a patriotic Pier 1 one that I bought a few years back. I bought inexpensive flowers from the grocery store and placed in various mason jars.

Then it was firework time! Even though it's been hotter than Hades here, dry as can be, AND we had a burn ban, I still convinced the boys to safely shoot them off in the street. If the cops would have shown up, I was gonna to take the fall! But, we're far out enough in the country I think we were safe from the 'ole 5-O!

Menu Monday: 4th of July

Happy Monday! I'm basking in the glow of a positively normal weekend! No weddings, no guests, no plans. It was glorious! It kicked off a 6 week stretch where we don't have any real obligations on the weekends. That's my kind of summer!


It's been a while since I've done a Menu Monday. Heck, it's been a while since I've done a lot of things on this blog, but that's another story. Since, this is 4th of July week, I thought it would be nice to highlight some of my classic, standby recipes for a grill-out get together. I will be making most of these recipes for our own little shindig. If you're still menu planning, or looking for something to add to your recipe collection, here are some all-time greats!

Chinese Noodle Slaw - This is the only slaw I ever make. I LOVE it. It's a crowd pleaser every time!


Watermelon Cucumber Salad - If you've got a supply of watermelon, this is a great (and different) way to use it. Give it a try!!


Sweet BBQ Pineapple Kabobs - Kabobs are so festive and fun! I love mixing up different ingredients together on a skewer. This recipe is delicious. I love the combo of sweet orange and bbq sauce!


Beans - These baked beans are not like the average baked bean dish. It is chock-full of various bean types with a tangy sauce, and bacon to top it all off! This has been a family favorite of ours for a long time.


Fruit Tarts - It doesn't get any easier than this. Trust me! If you need a quick, patriotic dessert, this is your go-to item. They're also light and delicious!


Cobbler - I love homemade cobbler and ice cream. This is one of my favorite dessert recipes on the blog, and you could use any fruit you like!
