Menu Monday 7/18/11

Happy Monday! 

I have a massive menu to share this week. I'm not really sure why I planned to cook so much! Last week we had such good food at home that we got bummed on the nights I didn't have food to cook and we had to go out. Nothing from a restaurant sounded as good! We've also been going to a produce stand every Sunday afternoon and stocking up on fresh goodies. This has forced us to cook more healthy foods. After all, I've gotta use the squash and corn before it goes bad!

Tomato-Corn Pizza: I made this regular favorite last night for dinner. It is sooo good with fresh corn. If you haven't made this Southern Living recipe you really, really should. I am eating my leftovers at my desk right now and it's just so tasty! Click here for my post with the recipe.

Result: ALWAYS good. Never disappoints.

Caesar Pork Chops: This is a new Kraft recipe that we'll be trying out tonight. It sounds easy and tasty. I may or may not make the recommended pasta side. I am planning to make the potatoes (next).

Verdict: YUM! Here is my post with the recipe.

Roasted New Potatoes: There are lots of fantastic ways to prepare new potatoes (I've always been a fan of the onion soup mix method myself). But, this roasting recipe from Kraft is my new favorite. We leave out the mayo mixture though, it's just not needed. The fresh parsley on top just finishes it off, yum!

Outcome: Seriously delish. Just make 'em!

Beef and Cheese Foldover: This is another regular in our house, and a popular one on the blog. Click here for my recipe. This week, I'm going to use fresh instead of frozen corn and chop up a green bell pepper and throw in (another item from the produce stand that I need to use!).

Result: Especially tasty! I added the green bell pepper in with the beef while it was cooking. I also topped the slices with a little dollop of sour cream and drizzled with Pancho's dressing. That stuff is my fave!

Fresh Peach Salsa: In addition to tons of squash and corn, we've got gobs of peaches. I'm not complaining though; they are one of my most favorite summer fruits! I look forward to peach season all year. I'm planning to double this Kraft salsa recipe and serve on top of some grilled grouper. On the side, we'll have some Kings Hawaiian rolls (my fave) and this squash recipe below.

Outcome: Great! If you have lots of peaches, this is great of fish, chicken or as a side with chips. The downside - doesn't last long.

Marinated Grilled Squash: Y'all. I've got 7 yellow squashes and 4 big zucchini squashes. Too much! We're going to make this recipe and it should use a bunch of it up. I love this marinade because it brings out the natural flavors of the vegetable. Click here to read my post with pictures.

Result: It was very windy out the night we were going to grill, so instead we did on the stove and sauteed. It was not as good, but worked.

Chicken-Orzo Salad with Goat Cheese: This just sounds amazing. Orzo? Goat Cheese? Love them both. I can't wait to try this recipe from Cooking Light. Stay tuned for the verdict! If it's good, I will definitely be posting about it.

Verdict: WOW! So light and tasty. This one is blog-post worthy. Stay tuned for my post!

Honey Chicken Salad: I bought a rotisserie chicken and whipped this up yesterday. My goal is to bring lunch to work at least 3 days this week instead of getting out so much, it adds up! This is my new favorite chicken salad - click here for the Southern Living recipe.

Thoughts: Great on crackers, too! This has already been devoured.

Peach Cobbler: Again, the peaches are piling up in our kitchen, so I'm going to use the recipe from my Easy Blackberry Cobbler and use fresh peaches in place of the blackberries. That cobbler recipe is great for any fruit! One night after dinner this week, I'll make this little treat. Can't wait!

Results: Outstanding! I just love that cobbler recipe - it's perfect for any fruit!
