Are you off today? If so, I hope you are enjoying the free time like me! I went to breakfast this morning with the hubs, I'm getting caught up on laundry and about to do some baking. Life is good!
Before I get into the menu for the week, I wanted to let you know that I've now converted ALL of my recipes into printer-friendly formats. Yep, I spent the better part of Saturday putting 60+ recipes into Google docs. I feel so accomplished! And my eyes are crossed...

Here's what's on the menu this week:
Peanut Butter Banana Bread - Click here for the recipe. I've got some extremely ripe bananas and Keith has requested that I make this bread again! It's so good.
Roast Chicken with Balsamic Bell Peppers and Mascarpone Mashed Potatoes - This will be dinner tonight and I cannot wait! I plan to take pictures and blog about it. It's a Cooking Light recipe that sounds fantastic!

Chicken and Strawberries over Mixed Greens - This is one of our Cooking Light favorites! Click here for the recipe. It's a very yummy, fresh salad.
Sake-Glazed Halibut with Edamame Rice - This is a new one for us to try by Pampered Chef. It just sounds so wonderful, but is supposed to come together really fast. I can't wait to try it! I've got to go buy some sake today, which should be fun!
Update: This was just okay. It was good, but not worthy of posting the full recipe here. I tend to forget that Halibut is a 'fishy' fish, and the sake was so mild in flavor it didn't give it much of a boost. I wouldn't go to the trouble to buy sake just for this.
