These were my brother, Kyle's, favorite cupcakes ever. He always begged mom to make them :) Yesterday would have been his 24th birthday, and Mom and I always make them on December 4th in his memory. He wasn't a huge sweets fan, so these are perfect if you don't care for lots of icing. They're pretty delicious! I think they're now becoming Keith's favorites, too.....
Kyle's Chocolate Cream Cheese Cupcakes (adapted from Betty Crocker)
Ingredients:
1 package (8 oz) cream cheese
1/2 cup sugar, plus 4 teaspoons
4 eggs
1 bag (6 oz) semisweet chocolate chips (1 cup)
1 package Betty Crocker SuperMoist devil's food cake mix
1 1/3 cup water
1/2 cup vegetable oil
Preheat oven to 350. Place paper baking cup in each of 24 medium muffin cups (I ended up making 30). Soften 6 ounces (part of 8 oz block) in microwave in a small bowl.
Add 1/2 cup sugar...
...and 1 egg.
Beat with a mixer until smooth.
Stir in chocolate chips.
Set aside.
Now, prepare the cake mix as directed with 1 1/3 cups water, 1/2 cup vegetable oil, and 3 eggs, and beat with a mixer.
Get your pan, and both mixes together.
Spoon one spoonful of cake mix into the bottom of each cup, then add a small spoonful of the cream cheese. Top with more cake mix.
Once they're all ready, make your swirl mixture.
Soften the remaining 2 ounces of cream cheese, reserved from earlier. Add 4 teaspoons sugar and blend until smooth.
Pour into plastic baggie and snip a tiny corner.
Pipe designs of your choosing into each cupcake.
Bake 20 to 25 minutes or until toothpick comes out clean.
They look so cute, and you can actually see the designs pretty well!

I have two brothers in heaven and I like to think they smile when we remember and enjoy the things they loved too. The cupcakes look yummy!
