Sesame Pork

Here's a recipe for an easy, yummy grilled pork tenderloin with veggies. It's from my most beloved cookbook by Southern Living.

Ingredients:
1/2  (1 1/2-pound) package pork tenderloins, cut into 1-inch cubes
2  yellow summer squash
2  small onions
1  green bell pepper
1  red bell pepper (my addition)
1  (15-ounce) can pineapple chunks, drained
1/2  cup  soy sauce
1/2  cup  Russian dressing
2  tablespoons  sesame seeds
3  tablespoons  lemon juice
1/2  teaspoon  ground ginger
1/2  teaspoon  garlic powder
Rice (optional)

One thing to note: the pork needs to marinade at least 3 hours. So, to make it easy on myself I made the marinade the night before we made it. The pork had plenty of time to soak up those good flavors!


Ok, here's how to make the marinade:

Combine 1/2 cup soy

1/2 cup Russian dressing

2 Tbsp sesame seeds.
I found these toasted seeds in the Asian food section, I like them so much better then regular!

3 Tbsp lemon juice.
Yeah, I should have squeezed it fresh, but this was easier, obvi.

1/2 tsp ground ginger

1/2 tsp garlic powder

Whisk together!

Cut up the tenderloin into cubes

Set aside 1/2 cup of the marinade (cover and refrigerate). You'll use this later when grilling the veggies.

In a dish or freezer-safe plastic bag, add the marinade to the pork and toss to coat.
 Refrigerate.

Okay, fast forward about 24 hours for us (at least 3 for you):

Cut up the peppers, squash and onions.

In a grill basket, or something similar, add the veggies and add that reserved marinade.
Grill on medium-high heat for about 15-20 minutes.

Remove and put on a platter or in a bowl or something. If you're feelin' up to it, cover with aluminum foil to keep warm.

Add the pork and the pineapple next. Grill for about 7-8 minutes or until done.

Poor Keith. On the night that we grilled these, it started raining like cats and dogs. Luckily we have a screened-in porch that Keith can grill under, but it was raining sideways. What a mess! We waited as long as we could for it to stop the downpour, but it never did. That's why these pics are dark, it was late!
