In honor of Halloween, I wanted to share with you a cute little appetizer. We had a party at work today and this is what I brought. It's very tasty! And easy!

Caramelized Garlic Cheese Spread
Here's what you need:
2 teaspoons butter
2 tablespoons coarsely chopped garlic (I know that's a lot!!)
1 teaspoon sugar
8 ounces cream cheese, softened
1/4 cup butter, softened
8 ounces sharp cheddar cheese, shredded
1/4 cup sliced green onion
1/4 teaspoon salt
1/2 cup finely crushed Cheez-its
1 green bell pepper
crackers to serve with
Ok, in a skillet put in the 2 tsp butter, sugar and all that garlic!

Heat, stirring, over medium heat, until the garlic starts the brown...your house will be smellin' so turn up that fan!
Yep, browned, like that! Set this aside for a bit.

Speaking on cream cheese, Keith is such a good hubby, he went to the store for me yesterday on his break from school. I make my lists pretty specific so he won't have too much trouble, but he always buys cream cheese in the spreadable tub when I say "8 oz cream cheese." The boy hasn't learned that it means I need a block :) Hehe, oh well! :) Kinda cute.
Back to this, add the 2 cups of cheese.
Then the softened butter.
Now you need to chop the green onions, if you haven't already.
Now it's time to make a ball...
Cover and put in the fridge for at least an hour.
In the meantime, put the Cheez-its in a bag and choose your crushing weapon.

I love that silly red silicone rolling pin. It weighs a ton. I could use it for self-defense if someone ever attacked me while baking. Good to know, right?
That looks pretty good. Now, put the crumbs in a pie pan or something similar.
Time for covering our pumpkin!
I crushed enough Cheez-its to cover 2-3 pumpkins. I didn't measure. Oops.
Now, here's for the fancy part, get out your green bell pepper and carefully remove the stem. Put that in your pumpkin cheese ball and your ready to go! I peeled a couple of thin strips and tried to make them curl, too.
Yum. And cute, too!
