Blueberry Cheesecake Bars

Mmm, ya'll these are so yummy!

Mom and I have made them twice this summer.
The first time was for Jeni's dessert shower, and the second was for this past weekend when we co-hosted a couples shower for our friends, Lauren and Lee.

Jantastic and I spent a full day in the kitchen doing things and I took some fun pictures of the process. I'll also share the recipe with you, too. It comes from my pretty Williams-Sonoma cookbook called Cookies, Brownies & Bars.

Recipe for Blueberry Cheesecake Bars

Preheat the oven to 325.

First, you make the crust:


2 and 3/4 cups of graham cracker crumbs (we put in a food processor 'til it was like sand)
2 Tbsp of sugar
3/4 tsp cinnamon
1/2 cup unsalted butter, melted

Stir together.
Line a 9 x 13 pan with foil on the bottom and sides.
Butter that foil.

Press the crumbs in the bottom and up about 1" on the sides...

Bake the crust for 10 minutes and cool slightly.


Next, you make the filling. Here are the ingredients:

4 large eggs, room temperature
1 and 1/2 pounds of cream cheese, room temperature
1 cup of sugar
2 tsp vanilla
1 tsp cinnamon
3 Tbsp flour
1/2 cup sour cream
and 2 cups of fresh blueberries, rinsed and dried...

mmmm, blueberries.

To make the filling, whisk eggs lightly and set aside.
In a large bowl, combine cream cheese, sugar, vanilla and cinnamon.
Mix at medium speed for 1 minute...


Add the flour and mix for about 1 minute.
Add half of the eggs and beat, then add the other half.
Add sour cream until just incorporated, about 30 seconds.

Spoon in the blueberries very gently...


Pour the filling into the crust.


Now, it's ready to bake. Keep in the oven until it sets and doesn't wobble.
40-45 minutes.
Cool for an hour
Cover with plastic wrap
Chill at least 4 hours. This is a good item to make ahead of time for parties!

Holding the foil edges, transfer to a cutting board.
Run a knife under hot water before making each large slice to make bars. This will keep it from getting too messy.


Makes about 48 bars. People go nuts over 'em!!

Store in airtight container in the fridge for up to 3 days. Yummmy!!!

I love your recipes and have made a bunch of them! Do you think these bars would work with raspberries too? I want to make them for my husband for valentines day.
