Menu Monday 8/2

Happy Monday! After eating so much seafood in so many restaurants on my 4-day vacay, I'm ready to eat at home!

Here's what I've got planned:

Spicy Cashew Chicken Bundles - I've made this yummy little dinner before! Get the Pillsbury recipe from this post. These are easy, delicious and make great leftovers.

Rosemary-Mustard Pork with Peaches - I tore this out of a Food Network magazine recently and I've been flipping to it ever since in my massive recipe collection. Peaches are awesome right now and I've got rosemary on my back patio. We'll see how this tastes!

The Ultimate Stuffed Mushroom - I have a confession: I've never made stuffed mushrooms. Am I a freak? No? Okay, thanks. I have some 'shrooms in the fridge so I'll be whipping these up soon. Here's the Kraft recipe.

Pasta with Asparagus, Bacon and Pine Nuts - I've made this Cooking Light recipe before, and I like to substitute bacon for the pancetta that the recipe calls for, only because I have a thing for bacon. No offense, pancetta. This pasta is nice and light and really easy!


Pimiento Cheese - I'm sick of taking frozen lunches to work so I'm going to whip up some delish pimiento cheese for sandwiches. (Image courtesy of iliketocook)

Fruit-Topped Triple Chocolate Pizza - This is a wicked, wicked good dessert. Pampered Chef has great dessert recipes and this is one of Keith's favorites. I'll be sure and post the recipe for you guys after I've made it!
