Ginger Steak Salad

This is one of our favorite 'main dish' salads! We've been making this for a few years now and it serves the two of us the perfect amount. It's really, really tasty and very easy. This is actually a slightly adapted recipe from The Pioneer Woman. I am confident that the majority of you are well-versed in the P-dubs' ways. She is a blogging, cooking, homeschooling, gardening, photography wizard of a woman who has now had two New York Times best-selling cookbooks, a novel AND a show on the Food Network. She's basically just awesome. Many of her recipes, however, feed an army. But, this is one that is perfect for two!

Ginger Steak Salad

Ginger Steak Salad

Ingredients:

{marinade}
2 Tbsp soy sauce
1 Tbsp sherry
2 cloves garlic, minced
2 tsp brown sugar
1 whole rib-eye, strip or sirloin steak

{dressing}
3 Tbsp olive oil
3 Tbsp soy sauce
3 Tbsp white sugar
1.5 Tbsp lime juice
3 cloves garlic, finely diced
1.5 Tbsp fresh ginger, minced *fresh is key!*
1/2 whole jalapeno, seeded and diced

{salad}
2 whole green onions, chopped
8 ounces salad greens (we like a mixture)
1 cup cherry or grape tomatoes
Combine steak marinade ingredients in a plastic baggie. Mix and place steak in the bag. Marinade for 30 minutes to 2 hours.
Combine salad dressing ingredients and slice the green onions.
When steak is finished marinading, add 2 Tbsp olive oil to a hot skillet. Cook steak a few minutes per side until medium rare. Remove from skillet and keep on a plate, allowing to cool slightly.
Assemble the lettuce, green onions and tomatoes on dinner plates. Top with some of the dressing and toss together. 
Slice the steak at an angle and place on salads. Add the remaining dressing.

Yum. Looks awesome! I'm trying to incorporate more salads in our household. This looks like one that would be a hit with both of us. :)
