Menu Monday 4/11/11

Happy (late) Monday! I have been meaning to post this week's menu for hours now, but the day got away from me! Either way, here's what I'm dishing up this week:

YUM - I'm excited. There's lots of green there this week, too.

From top left:

Grilled Chicken and Spinach Salad with Spicy Pineapple Dressing - A Cooking Light recipe that I just cannot wait to try. It calls for jicama and while I don't think it's critical to the dish, I am excited to try one!

Result - Delicious! The salad dressing was great, too.

Walnut and Rosemary Oven-Fried Chicken - Another Cooking Light creation that has received rave reviews online. Should be fantastic! I just adore rosemary, too.

Outcome - I LOVED it! I didn't snap a picture but will make this again and do a whole post on it. It was just too easy for such big flavor.

Steak and Broccoli Stir Fry - This is a repeater meal for us. Click here to go to my blog post with the Food Network recipe. We haven't used our wok in forever, so we're long overdue.

Strawberry and Basil Muffins - I have strawberries and I have basil. But, I don't have any baked goods in my kitchen. This is the solution to that problem. I just did a quick search online and found this recipe (it lists basil as the alternative option to orange). Photo comes from The Dogs Eat the Crumbs. Can't wait to give these unique muffins a try.

Result - Hmm. They were good, but also so different that I had a hard time deciding whether or not I like them. I think a bit more sugar might be good to sweeten them a tad.
