Happy Labor Day!
Keith and I spent the weekend in Little Rock visiting friends and family, and I'm leaving tomorrow for a work trip in the UK - wooohoooo! - and will return on my birthday, Sunday, September 12. So, I'm taking a break from packing to share a yummy recipe that my mother and I made yesterday. That's right, I haven't totally forgotten about my appetizer series :)
Crab rangoon. It's fantastic and easy!
Baked Crab Rangoon (adapted recipe from Kraft)
Ingredients:
1 can (6 oz) white crabmeat, drained
4 oz cream cheese, softened
2-3 green onions, thinly sliced
1/4 cup light mayonnaise
1 Tbsp soy sauce
Garlic powder, to taste
Salt and pepper
Won ton wrappers
Sweet and sour sauce
I've said this before, but I really like appetizers with a simple ingredient list!
This was my first time to cook with wonton wrappers. In the grocery store, they were near the produce section in a refrigerated area. They are so easy to work with!
Preheat the oven to 350 and lightly grease a muffin tin (we made 36 at mini muffin size and I think they are much easier to eat than using a regular muffin tin)
Fold the wontons into the cups
Stick in the oven for about 6 minutes or until golden brown. Meanwhile, make the mixture.
Combine the crabmeat, cream cheese, 2 thinly sliced green onions, mayo, soy sauce, garlic powder and salt and pepper.
Ready to go!
Take the wontons out of the oven, and fill with the mixture
Bake again for 3-5 minutes or until warmed through
We added more sliced green onion on top. You could serve this with sweet and sour sauce on the side...
... or make it easy and put a small spoonful of sauce into each cup. I preferred them with the sauce on top. All 36 of these little babies were consumed by 5 people in literally 5 minutes. We will definitely make them again.
These look really impressive, take very little time to make, AND baked is better for you than the fried kind in restaurants, so you can feel good about that!
