Hello! Welcome to Keeping Up with the Joneses. Thanks for stopping by! We're a young couple living in the East Arkansas/Memphis area otherwise known as The Delta, with a love for family, friends, faith and food.

We believe that some of the best memories are created at home around the dinner table, and when entertaining those you love. This little blog is where I share recipes, wine, our home and our life. Enjoy! -Kendall

What You'll Find:

I love to try new recipes. In fact, I rarely make the same thing twice. I'm a bona-fide cookbook collector, Pinterest addict and magazine aficionado. On the blog, you'll see what I've got cooking.

I love wine, y'all, so from time to time I feature bottles I've loved. Crafts and decorating our little house are passions of mine, so you may see some of that. Thanks for stopping by!

Bistro-Style Onion and Artichoke Galette

Mmmm. Our kitchen sink is full of dirty dishes and our bellies are full. Just the way I like it!

This evening, I made a really good appetizer/meal. I'm counting this as appetizer #4 in my series to 10. It's called Bistro-Style Onion and Artichoke Galette, from Pillsbury. I found this in a small appetizer booklet, and I'm really pleased with the way it turned out!

Onion and Artichoke Galette

Ingredients:
1 Tbsp vegetable oil
1 large sweet onion, thinly sliced
2 Tbsp balsamic vinegar
1/2 tsp garlic and herb seasoning blend
1 refrigerated pie crust
1 1/2 tsp Dijon mustard
4 oz Gruyere cheese, shredded (1 cup)
1 jar (6 oz) marinated artichoke hearts, well drained, coarsely chopped
1/4 cup chopped well-drained fire-roasted red bell peppers (from 7.5 oz jar)
1/2 tsp crushed red pepper flakes
1 tsp finely chopped fresh thyme leaves (I used dried, it was fine)
1 egg white

It's full of all good things!

Preheat oven to 375.
In a 10-inch nonstick skillet, heat oil over medium-high heat. Add onion; cook 8-10 minutes, stirring frequently....

Love that smell!

Reduce heat to medium. Stir in balsamic vinegar....

...and seasoning blend, cook 3-6 minutes, stirring frequently until liquid is absorbed. Remove from heat.

Either grease a cookie sheet with cooking spray, or line with parchment paper.

Unroll the pie crust, and brush with Dijon mustard.

Grate the Gruyere cheese.

IMG_7911

Sprinkle 2/3 cup cheese on the crust, leaving a 1 inch border.

IMG_7912

Spread onions over evenly.

IMG_7913

Chop artichoke hearts and red pepper...

IMG_7915

Add on top, sprinkle with red pepper flakes and thyme. Then sprinkle with remaining Gruyere cheese.

IMG_7916

Fold up edges of dough, tucking as needed.

IMG_7917

Brush with egg white.

Bake 375 for 20-25 minutes until golden brown. Let cool 15 minutes. Slice and serve!

This was so delicious! We loved it! It counted as our whole dinner because it was just the two of us. If I were making this recipe for a party, I'd probably buy extra pie crusts and make mini galettes. They would be so cute and easy to eat with your fingers. Yum!! This one is a keeper!
