Y'all, we had this for dinner the other night. OH, my, it was scrumptious!
It's South~of~the~Border steak (Pampered Chef Cookbook), Zesty Corn Salsa (Southern Living) and a simple salad with some Naturally Fresh Jalapeno Ranch dressing (best dressing company ever, duh!).
I felt like we were at Chili's, but better!!
Here are the recipes, because I altered them a bit:
South~of~the~Border Steaks
- 1 small tomato, seeded and chopped
- 1/4 cup snipped fresh cilantro
- 1 lime
- 1/2 cup shredded Mexican cheese, divided
- 1 tsp Pantry Southwestern Seasoning Mix (I didn't have the Pampered Chef brand, so I bought Mrs. Dash's version)
- 2 garlic cloves, pressed (I just use the jarred minced garlic equivalent)
- 1/2 tsp salt
- 2 boneless beef top loin steaks, cut about 1 inch thick
- Chop the tomato, snip the cilantro, and juice the lime to measure 1 tsp.
- Combine above ingredients with 1/4 cup of the cheese and mix gently. set aside.
- Combine garlic and salt (I added more Mrs. Dash southwest seasoning to this, a few shakes) mix together and spread over both sides of steaks.
- Place steaks (in my case, have Keith place steaks) on grill & grill until medium (or however you like 'em). About 2 minutes before steaks are done, remove and set on plate. Top both evenly with the tomato mixture and sprinkle with remaining 1/4 cup cheese.
- Place steaks back on the grill until cheese in melted.
Zesty Corn Salsa
- 3 cups drained canned corn (I bought 1 can Fiesta Corn and 1 small can White Shoepeg and it measured 3 cups exactly)
- 1/2 red bell pepper (I used a whole one, what the heck! more color)
- 1 jalapeno seeded and diced (I just use jarred diced jalapeno,drained, and threw in a heaping spoonful or more cuz I like it spicy)
- 1 Tbsp olive oil
- 1/2 tsp lime rind (I used the lime from the steak recipe above and just zested it. I probably used more than the 1/2 tsp, too)
- 1/4 cup lime juice (I used the lime from above for this, too. It gave enough juice for the steak recipe and just enough to fill 1/4 cup for this recipe)
- 1/4 tsp salt
- 1/4 tsp cumin
Mix it all together.
