Curried Shrimp Rolls

I'm on a roll posting recipes lately! I've got so many dishes in my folder of things to blog about! Speaking of rolls, here's a very quick and easy dinner idea for you.

Curried Shrimp Rolls

Ingredients
1/4 cup mayonnaise
1 tablespoon lemon juice
3/4 teaspoon curry powder
kosher salt and black pepper
1 pound cooked, peeled, and deveined large shrimp, coarsely chopped
stalks celery, sliced
1 cup chopped arugula
hot dog buns, toasted
potato chips (optional)

In a medium bowl, whisk together the mayonnaise, lemon juice, curry powder, and ¼ teaspoon each salt and pepper.

Add the shrimp, celery, and arugula and toss to combine.

Serve on the buns with the potato chips (if desired).

Note: This is seriously ready in 15 minutes. You just can't beat that! After trying this once, I think the next time I make it, I'll add more greens to the bun before topping with the salad mixture, just to give it more texture when you bite into it.
