Roasted Corn, Chicken and Goat Cheese Quesadillas

Do you like quesadillas?
Mmm, we love 'em!

Last night I made these Roasted Corn and Goat Cheese Quesadillas (source: Cooking Light). They were fantastic! I was honestly surprised; I was really wondering how these would turn out as I was making them.

They are ridiculously easy, so give 'em a try!
Here's how:

Roasted Corn, Chicken and Goat Cheese Quesadillas

Ingredients:
1 cup fresh corn kernels
1/4 cup chopped green onions
2/3 cup (5 ounces) goat cheese, softened
10 tablespoons salsa verde (or salsa of your choice)
chopped, cooked chicken (this was our addition to the 'dillas)
soft tortillas of your choosing

The recipe called for 8 6-inch corn tortillas, which we did not have. We used 4 large regular flour tortillas and it was perfect for 2 people.

Cut the corn off the cob. I had thought I would need both ears to get a whole cup, but one did the trick.

Slice 1-2 green onions

Then chop them up

In a nonstick skillet over medium-high heat, roast the corn for about 2 minutes or until they start to brown.

Add the corn to the goat cheese and mix thoroughly

Now, you're ready to assemble!

Spread the corn mixture over the tortilla. I used half of the mixture because we were only making 2 large quesadillas instead of 4 small.

Add a little bit of chicken (if you want it). In my opinion, it's not needed. Keith just prefers his meals to have some sort of 'meat'.

Add green onions and salsa, just as much as you would like.

Coat a skillet, with nonstick spray and add the quesadilla. Cook over medium heat and watch closely because these burn easily!

See what I mean? Flip it over and toast the other side.

Remove from pan and place on cutting board to slice. See, some of my little edges are burnt! Ooops.

Next time I won't mess with the skillet and I'll just use my Quesadilla Maker, and they will be much less likely to burn. I have one after all! Duh.

Slice into as many pieces as you would like.

Stack on a plate....

Serve alongside salsa and a little bit of sour cream (if you like). I don't think I'll do the sour cream on the side next time. It wasn't really necessary with the creaminess of the goat cheese already in the 'dillas.

These are amazing! I was so surprised when I took my first bite. Really impressive and really easy!
We will definitely make again! Yummmmmmm
