Date night.
This was our Date Night dinner at home tonight.
Shrimp with Kebabs made of Mango, Pineapple, Red Onion, and Red Bell Pepper with a side of Zucchini Spanish Rice. It was our own creation.
Sound so fresh and so clean?
Wait.
Did I just say that? Yes.
I meant, Sound so fresh and so delicious?
Here's how, kiddos:
Mango Shrimp Kebabs
Ingredients:
2 red bell peppers
1 red onion
1-2 limes
1-2 mangoes
1 can pineapple chunks
Seasoning (we used Southwest Chipotle by Mrs Dash)
Shrimp (raw or cooked)
Raw probably would have been better, but Mr Jones ran to the store for us tonight, and pre-cooked was his choice. It worked fine!
After soaking the skewers in water (to avoid burning up completely), we cut and assembled kebabs of red pepper, onion, pineapple and mango.
The limes were used later to squeeze over the kebabs...
Since the shrimp were already cooked, we just shook the seasoning over the top and grilled in a basket to heat up.
The kebabs took a little bit longer.
Yummy shrimp.
To serve as a side, I made a really quick and easy glorified store-bought side dish. We first tried this when we made this Cilantro Rice and Chicken recipe.
You simply add fresh zucchini to Knorr's Spanish Rice.
In a saucepan, add 1 Tbsp olive oil and cook the chopped zucchini for about 4 minutes. Add 2 cups water and the Spanish Rice. Bring to a boil and reduce heat and simmer for 7 minutes.
Let it sit for a few minutes to thicken before serving.
It really adds a fresh taste to this convenient rice side!
The shrimp turned out really good.
And was way too easy.

This meal was really good and really simple! We realized after making this the first time, that more mangoes would have been great.
Keith huffed down the shrimp really fast!!
