Blueberry Banana Pie

Summertime! We are just a few days away from the 'official' start. June 21st, or Summer Equinox, is the longest day of the year and marks the official start of summer. It also happens to be the date that I married my love, so I keep that bit of knowledge stored in a special place.

Something about the warmer weather makes me crave desserts that are lighter, and often fruity. Down here in the south, the heat makes us sluggish enough; I don't need a heavy dessert to add to it! So, last week, when Keith and I were asked to bring a dessert to a shrimp boil at our friend's house, Keith requested this recipe. My Mom has been making it for as long as I can remember. I'm not even certain what the origin is, but it looks like a photocopy from a Southern Living book, I can't be too sure. Either way, this is a very light treat! Give it a try!

Blueberry Banana Pie

Ingredients:
  • 1 (8 oz) package cream cheese, softened
  • ⅓ cup sugar
  • 1 baked and cooled 9-inch pastry shell (I used Pillsbury pie crust and baked ahead of time)
  • 2 bananas, sliced
  • 1 cup blueberry pie filling
  • 1 cup whipped topping, such as Cool Whip
  • ¼ cup fresh blueberries

Combine cream cheese and sugar; beat at high speed with an electric mixer until light and fluffy. Spread evenly in bottom of crust.

Arrange banana slices on cream cheese layer. Spread pie filling over bananas. Top with whipped topping.

Add fresh blueberries on top and chill until ready to serve. Store in refrigerator.



Enjoy this treat on a warm-weather day! Or any day of the year, really :)

My aunt used to make this for any kind of family gathering we EVER had. It's definitely one of my FAVORITES!! Only difference with my aunt's recipe was that she used a graham cracker crust. SO DELICIOUS!!
