Do you like the smell of lavender?
Of course. Who doesn't?
But, do you like to EAT lavender?
If you don't know the answer to that question, these cookies would certainly change your mind!
I had them this past weekend when I visited my sister in Idaho. She got the recipe from her fabulous neighbor, Laurie. I proceeded to eat about 12 cookies at my sister's house, and wrote down the recipe promptly. Thank you, Jennifer and Laurie!
Here's the recipe, with a couple of twists of my own:
3 cups flour
1 tsp baking powder
1/2 tsp sea salt
1 Tbsp dried lavender flowers, ground (I went to Fresh Market, likely not available at most grocery stores)
1/2 cup melted butter
2/3 cup maple syrup
2 tsp vanilla
Optional:
High-quality jam or preserves (flavor of your choice)
Icing/Glaze (my recipe below)
Here's how you make them! So simple, folks.
Preheat oven to 350
Using a mortar and pestle, grind the lavender flowers to release favor and break down larger pieces.
In a large bowl, combine the flour....
Salt...
Lavender.....oh the intoxicating fragrance!
Vanilla....
Butter....
And maple syrup!
Stir the dough up!
Now, you are ready to shape into balls. I used a tablespoon measurement so mine would be similar in size.
It produced 30 cookies, total.
Place on a baking sheet and gently press thumbprint into each...
Ok, now this part is optional. I decided to do half of my cookies with blueberry jam and the other half with a glaze/icing mixture....
Not that Smucker's wouldn't work here, but go for the good stuff if you can! Homemade is even better! I chose blueberry, but any of the berries would be good on this cookie: raspberry, strawberry, blackberry, etc.
Place a small amount of jam into the center of each.
Looks yummy!
This is ready for the oven!
Bake for 12 minutes.
Cool on a wire rack before you glaze the remainder (if that's the route you take)...
I made my icing this way:
Sift 1 1/2 cups powdered sugar
Beat in one egg white slowly
Beat in one egg white slowly
If needed, slowly add more sifted powdered sugar to reach desired icing consistency
Add lilac or violet food coloring
Once I put a little dollop of icing on each cookie, I added a few little lavender flowers on top.
Swoon. Look at that icing!
Good golly. These are pretty... if I do say so myself!
I did two versions this time just to see which I prefer.
I can't decide.
Both kinds are very, very good!!!
