Anyway, my obsession with the classic mojito has extended to all kinds of flavored versions. My Pinterest board of cocktail recipes is full of mojito variations, and this Blackberry version just called my name when I found myself with a crop of yummy blackberries from the farmer's market.
It was so refreshing, bright and summer-y. I felt like I belonged on a breezy beach in Miami instead of on my hot patio with nothing between me and the large, swarming mosquitos of the Delta but a thin screen. And thank goodness for that screen, y'all. Those suckers will carry you off around here.
Make this cocktail and your summer will thank you.
Blackberry Mojito

Ingredients:
6-8 mint leaves (more for garnish)
1/4 cup fresh blackberries (more for garnish)
1 tsp light agave syrup
3 oz light run
2 oz fresh squeezed lime juice
club soda
ice cubes
Add the mint leaves, fresh blackberries, and agave syrup into a cocktail shaker. Using a muddler or the stick of a wooden spoon, muddle the ingredients until the mint is fragrant. Add in ice cubes, rum, and lime juice; cover and shake vigorously a few times. Strain the liquid into an ice-filled glass and top with club soda. Garnish with mint and blackberries. Makes 1-2 drinks depending on size of glass.
