Peanut Shrimp Salad with Basil Lime Dressing

This salad rocked my world a week ago. I am still dreaming about it. It was a delicious combo of flavors, and the fresh mango and mint totally set it off. The dressing is incredible and would be great on lots of different salads. I came pretty close to licking my plate clean! This is yet another favorite  Southern Living recipe to add to my repertoire.

Peanut Shrimp Salad with Basil Lime Dressing

Ingredients:
3 green onions, sliced
1 lb raw frozen shrimp, peeled, deveined
1 cup Panko (Japanese breadcrumbs)
1/2 cup dry-roasted salted peanuts
1 Tbsp cornstarch
1 tsp curry powder
1 large egg, lightly beaten
2 Tbsp peanut oil
3 cups mixed baby salad greens
1 cup diced cucumber
1 peeled, diced mango
1/4 cup loosely packed mint leaves, chopped
1/4 cup dry roasted salted peanuts

Basil-Lime Dressing:
1/2 cup loosely packed fresh basil leaves
1/4 cup fresh lime juice
2 Tbsp peanut oil
1 Tbsp fish sauce
1 Tbsp sugar
1 tsp Asian garlic chili sauce (such as Sriracha)
1 tsp grated fresh ginger
1 garlic clove, minced

Cut green onions into 2-inch-long thin strips.

If frozen, thaw shrimp according to package directions. Pulse breadcrumbs and next 3 ingredients in a food processor 5 times or until mixture resembles fine crumbs. Transfer mixture to a shallow dish or pie plate. Dip shrimp in egg; dredge in breadcrumb mixture.

Cook shrimp in hot oil in a large nonstick skillet over medium-high heat 3 minutes on each side or until golden. Meanwhile, wipe out the food processor to use for the dressing. Add all dressing ingredients in and pulse for 20 seconds or until well blended. Set cooked shrimp aside on plate covered with foil to keep warm.

Gently toss together green onions, salad greens, next 4 ingredients, and 2 Tbsp. Basil-Lime Dressing in a large bowl. Arrange salad on individual plates; top each with shrimp. Sprinkle with 1/4 cup peanuts, and drizzle with remaining dressing. Serve immediately.
