I love to try new recipes. In fact, I rarely make the same thing twice. I'm a bona-fide cookbook collector, Pinterest addict and magazine aficionado. On the blog, you'll see what I've got cooking.

I love wine, y'all, so from time to time I feature bottles I've loved. Crafts and decorating our little house are passions of mine, so you may see some of that. Thanks for stopping by!

Menu Monday 4/4/11

Happy Monday!

It's raining like crazy and windy here, but the weekend sure was beautiful! I went to 2 grocery stores on Saturday and have been cooking up a storm ever since. The rest of this week is sure to be delicious!

Yeah, it's a BIG menu. My biggest one ever! Let me tell you about each (from top left):

Beef Quesadillas with Watercress and Corn Salad - This is a Real Simple recipe that sounds simple and pretty good. I couldn't find watercress, so I'll just be using regular mixed greens. This will be dinner tonight, so I'll let you know the results soon.

Result: These were not so good. They weren't bad, but definitely not good....more like 'edible.' I did like the simple salad recipe that was suggested with it, but the 'dillas were just plain boring, and I did not like the method recommended to broil them.

Cobb Salad with Barbecue-Ranch Dressing - This is another Southern Living salad recipe that I'm excited to try! Lately, I've been making an entree salad at least one night a week. I'm trying to be healthier!

Verdict: YUM - here's my post with the recipe.

Honey Chipotle Salmon - My mother-in-law gave me a box of this Salmon from Sam's Club recently. I normally don't buy frozen meals, but this sound so good that I'm glad she dropped it by!

Result: Fantastic! If you ever see this in your freezer section, grab it!

Salad with Aunt Trish's Dressing - This is a Pioneer Woman salad dressing recipe that is so fantastic!! This should go great on a salad beside the salmon.

Marinated Grilled Squash and Zucchini - I picked up a few of these this weekend and will grill them up to serve with the salmon, too. Click here to view my post with the recipe.

Chicken Caprese - This was our dinner last night, and we just LOVE it. I've only mentioned this recipe on the blog a bazillion times before. Click here to get it!

Pasta Salad - This is a Kraft recipe that I've adapted and it's pretty darn delicious. I'll be posting the full recipe this week!

Peanut Banana Mousse - My new Food Network Magazine Cookbook has a feature in the back called 10-minute desserts. I can certainly get excited about that! I have everything on hand for these Peanut Banana Mousses and can't wait to whip them up one night this week.

Result: Messy. It tasted good, but was surprisingly too messy to make. I won't do it again.

Strawberry Mango Basil Salsa - I got my hands on some fresh basil, ripe strawberries and mangoes on sale. This recipe from How Sweet Eats came to mind, so I plan to make this one night this week for a healthy snack. Sounds like it would be excellent over fish or chicken!

Outcome: Loved it! I ate it with pita chips one night for dinner. If you were going to eat it any later than the same day, you'd want to soak your red onions in water first. They can be pretty strong!

Lemon-Blueberry Muffins with Glaze - I made these yesterday and they were pretty good! It's a Cooking Light recipe, so it's lighter on the calories. I made them so I have something easy to grab on my way out the door. 

Well, there you have it! I'm full just thinking about all of this food.

I really like having something to grab on the way out the door too, it's a great time saver.
