Well, it was delicious. I must say, this was too easy for its own good. I mentioned on Monday that I got the recipe from Shared Sugar, a beautiful blog. I attempted to make the pie crust myself but it frustrated me and I was short on time. Plus, a package of good 'ole Pillsbury crusts were in my fridge. So, I adapted! Recipe is below.
Chocolate Strawberry Galette
Ingredients:
1 Pillsbury pie crust
A bar of gourmet dark chocolate (around 3 ounces)
1/4 cup heavy cream
1 quart strawberries, hulled and sliced
1-2 tsp lemon juice
3 Tbsp sugar
1 1/2 Tbsp cornstarch
1 egg
1 tsp water
raw cane sugar
Preheat the oven to 450 and line a baking sheet with parchment paper. Roll out the dough onto the surface.
In a saucepan, bring heavy cream to a boil over medium heat. Once boiling, move off heat and drop in broken bits of chocolate. Stir occasionally until melted and thickened.
Spread chocolate over the center of the pie crust, leaving a 1/2" space from edge.
In a bowl, combine strawberries, sugar, lemon juice and cornstarch. Top chocolate with strawberries using a slotted spoon to avoid getting too much juice.
Fold the edges of the pastry up and around. Whisk water and egg together and brush over edges of pastry. Sprinkle with raw sugar.
Bake for 16-20 minutes or until golden brown.
Serve with ice cream or whipped cream. YUM!
