Cinco de Mayo cupcakes!

Hola mi amigas! It's Cinco de Mayo, another one of my favorite small holidays. I'm not Latino and have no personal connection to the meaning of the day, but it sure is a great excuse to have Mexican food with your friends. In college, the fabulous seven got together on this date every year for margaritas and pot luck food. Ahh, the memories. I could post some (hilarious) photos from years past, but I'll have to do that later.

Anyway, so this year I'm celebrating with the "Wives Club Plus One" (as Lauren isn't a wife until June). We're each bringing something and we're going to start our little book club (more to come on that later). And, I'm in charge of dessert! I could have gone with something authentically Mexican, but I wasn't in the mood for Flan. So, what's a Cinco de Mayo dinner without Margaritas!? I found a great recipe online for Margarita Cupcakes...and I decorated them in an oh so cute way...


They look so pretty on a Fiesta platter courtesy of my M-I-L, Penny. She's managed to give me way too many themed serving pieces :) But, it sure is perfect for this!

So, I'll be taking half to the girls dinner tonight, and the other half I brought to work with me today.

This is my handy dandy cupcake carrier. It's a Martha Stewart item that I was given as a wedding gift. How cute and functional? If you flip that blue tray over it has smaller compartments if you were making mini-muffins or something.

So, I loaded them up in the car this morning certain they would arrive in pristine condition for me to share with all of my cs2 friends.

However.

Somehow in the journey the cupcakes managed to turn themselves upside down in their same spot. True story. When I opened up the back door and saw them all, I was so mad! So, there's no photo of the disaster. Luckily, I turned them all right-side-up and they don't look too terrible. Way to go, handy dandy cupcake carrier. I guess I should have buckled the dang thing into the seat or rigged a contraption to hold it in place. Oh well!

Now, I haven't actually tasted one yet, I'll let you know how they turned out...Happy Cinco de Mayo!!
