Shrimp Scampi Pizza

At the request of my friend, Jeni, here's another recipe for those of you that are always looking to try new things!

This one came to me from one of my relatives, Aubry Bost. At a few of my wedding showers, guests were asked to give me their favorite recipes. I love this one :)



Shrimp Scampi Pizza

3 Tbsp unsalted butter
3 Tbsp olive oil
2 garlic cloves, chopped
1 lb medium or large shrimp, peeled & deveined (raw)
1/4 tsp salt
1/4 tsp black pepper
1 large pre-baked pizza crust (you can use a ready-to-use such as 14 oz Boboli, or bake your own from the Pillsbury can)
2 cups shredded mozzarella cheese
3 Tbsp of basil pesto sauce

Heat oven to 425. Coat a baking sheet with cooking spray. Place butter, olive oil & basil pesto sauce in large skillet and heat over medium-high heat. Add garlic & shrimp and cook for about 5 min. or until shrimp is cooked through. Season with salt & pepper. Push shrimp to one side of skillet. Place crust on prepared baking sheet and brush with the butter pesto mixture. Scatter shrimp over the pizza and cover with the cheese. Bake @ 425 for 10 min. or until top is lightly brown.

This is SO quick & easy. I like to have it with cesar salad and a glass of white wine!
