I love Caprese anything! Basil, mozzarella and tomatoes = Italian heaven. Add a little balsamic and it's fab. For the recent party that mom and I helped with, we
Let me tell you how we did it. Simple? Yes. But, everyone at the party was asking about it. Ok, maybe not everyone, but plenty of domestically-inclined ladies.
- Buy some mozzarella balls. These are sometimes called Ciligine, you may have to buy at a specialty foods store (Fresh Market, Whole Foods, etc.).
- Drain them. Toss in a bowl with extra virgin olive oil, fresh cracked pepper and kosher salt or coarse sea salt.
- Soak regular-sized skewers in water, cut in half. Use something strong from a man's tool box.
- Assemble cherry tomatoes, pieces of basil leaves and the mozzarella balls on the skewers.
If you do, this is worth your time and sure is pretty on a platter!
Just before serving, drizzle with some balsamic vinaigrette. We used a jar of something a little more gourmet that we found at a gift shop. But, I'm sure just about anything will do.
