My slow cooker meal wasn't a disaster! In fact, it was pretty good. I may even consider using that beast of kitchen wizardry again...
Sesame Ginger Slow-Cooker Chicken
Ingredients:
- 2.5 lbs of boneless, skinless chicken breast tenderloins (thawed*)
- 1 bag (16 oz) ready-to-eat baby carrots
- 2 Tbsp grated fresh ginger root
- 3/4 cup chicken broth
- 1/4 cup plus 2 Tbsp honey
- 1 Tbsp sesame oil
- 1 1/2 tsp dried minced garlic
- ¼ cup plus 2 Tbsp soy sauce
- ¼ cup plus 1 ½ tsp cold water
- ¼ cup plus 1 ½ tsp corn starch
- 1 Tbsp sesame seed, toasted
- 2 green onions, sliced with tops
Spray 3 to 4 quart slow cooker with cooking spray. Place chicken in slow cooker. Add carrots; sprinkle with ginger root. In small bowl, stir broth, honey, oil and dried minced garlic. Pour over chicken and carrots.
Cover; cook on Low heat setting 5 to 7 hours. Mine was perfect at 5 hours and 30 minutes in a 3 qt crock.
With slotted spoon, remove chicken and carrots to serving platter; cover to keep warm. Strain cooking liquid through mesh colander; pour into 1-quart saucepan. In small bowl, whisk soy sauce, water and cornstarch until smooth; add to liquid in saucepan. Cook and stir over high heat until thickened and sauce begins to bubble.
To serve, pour sauce over chicken and carrots. Garnish with sesame seed and onions. This is best served over rice!
*If you opt for frozen, you need to cook longer.

To anonymous comment #5 - yep! that's right! 6-8 hours is the beauty of a slow cooker. Set it on in the morning and come home to a delicious meal!
Perfect! I was looking for a new slow cooker meal, and I think this one will hit the spot! I think I even have all the ingredients I need, except the fresh ginger. I wonder how much difference it would make to use the powdered stuff?
This is in my crockpot at the moment. Smells good. I hope it turns out okay- I accidentally poured in the soy sauce with the chicken, carrots, and broth. Did anyone else do this and still have it turn out all right? :/
The sauce was great! I used boneless skinless tenderloins and should have cut the cooking time more than what I did because the chicken was too dry, but like I said, the sauce was awesome!!
I am making this today! can't wait to see how it turns out! Didn't have chicken broth so used apple juice? we'll see??
My chicken completely dried out which made it really gross, but the carrots and sauce were really good. If I make this again I think I would either cook the chicken separately or cut the cook time waaay down. I'm not sure what is up with my crock pot because I only cooked it for 5 hours on low and it was like eating cardboard chicken??? But I would definitely do the sauce/marinade again!
I would try less hours or larger pieces of chicken. Not all crock pots are created equal, so less time would probably solve it. The sauce is so great, isn't it!
Did you put the chicken in frozen?
I used thawed chicken, but if you use frozen, I would plan to cook for at least 8 hours.
